Top 10 cakes/pastries that every baker should know?

I would love to learn more baking and want to be able to make 10 things off the top of my head. I am quite novice at baking so I would like if a lot of the ingredients were similar, if possible. Thanks for the input everyone!

Carrot, Black Forest, strawberry shortcake, cheesecake, chocolate truffle, mocha torte, gateau st. Honere (sp?), hollandais, Linzer torte, various flavours of mouse.
With Chocolate, vanilla, and mocha sponge cake you can assemble many well known cakes. A good mouse recipe can take many flavourings, the same with whip cream, and buttercream.
Mix and match to create something awesome.

The cakes are basically just entremets, so they're not entirely impossible to make, but executing them perfectly at that level is a whole different story. You can find a bunch of neat molds here that could potentially be used to make one of these.
Hnnnng the glazing on that eclair though, gets me every time!

Why can’t you train someone to bake?
I’ve been making tiny fruit empanadas with jam. If you cook the filling down really well you can hold them for two days. But for the most part the solution is par cooking. Pastries are meant to be fresh.

I'm personally not a fan of any of these flavor combinations (I'm one of those weirdos that hates Nutella) but I think the designs are super cute and I'll probably make some sort of apple pie type dessert with the pinwheel twist or the braid.
What dessert/pastries last a week in the fridge?

I'm in a new city and want to purchase some sort of dessert from a bakery for my friends. I leave the city today and but won't see my friends til the end of the week. What desserts last a week in the fridge or freezer would you guys recommend I get? I'm in a major urban city (New York) so there are all kinds of places.
edit: it also has to be a dessert that I can take on a plane.

Buy a cheese cake and freeze it. Make sure the sides and top are flat( no whipped cream on top)
After you freeze it but before you travel I would take it out of the box and wrap it in Saran and then newspaper. Newspaper is great insulation and will keep it from getting banged up.

I bake, and eat lots of items baked by others. Generally the crust is the best tasting part of muffins and of bread.
One exception is cheap white sandwich bread, the kind you'd get at a supermarket. Its is made at very high speed using all kinds of gross-tasting chemicals. All of it tastes bad -- kind of sour and stinky -- and since the crust is denser, it has even more of that bad taste.
Best Desserts and Pastries and where to find them

Wanted to see where everyone loves to go for their favorite sweets. For example, I love Marie's for their donut holes which are made from cake dough instead of yeast dough, like most places. I've been trying to find a good place that has cream puffs (with cream, not custard) without luck.
Best Malasadas at Starbread or somewhere else?
What about frozen custard shakes?
Canolis?
Baklava?

- I like New Roma on E St for donuts and cheap coffee. Their eclairs are good. The cannoli is not great. But it’s crazy cheap and the ladies that work there are nice.
- 16th St Donuts is also good for donuts.
- Sampino’s on F St has some great cannolis. I hear they’re not homemade but they are good. They are the most expensive frickin cannolis I’ve ever had though hah.
- Freeport has great cookies; thats about all I ever get. Their cakes look amazing!
- Faria’s croissants look great but I have yet to try. They’re also at the Midtown Farmer’s Market.
- I also really like Etorre’s on Fair Oaks. Oh man. They have tons of stuff. Display case is huge. And the first time I went, they gave me a free sample. Super friendly. I’ve gotten some cookies and the cannoli is authentic.
Edit: Sampino’s is the only place listed above that has baklava. I love baklava so if anyone has any other options, I’d love to hear!
